Vegan Breakfast Tacos

Ingredients: 
2 organic flour tortillas
3 oz firm, organic tofu 
3 ounces Daiya pepper jack cheese
1/4 cup Upton's Natural chirizo jackfruit
1/4 cup organic black beans(canned or cooked prior)
1/2 cup kale
1/3 bell pepper, sliced/diced

1 clove of organic, fresh garlic
1 thumb of organic, fresh ginger
Small slice of onion diced
1 tbsp avocado oil (for cooking with)

Directions: 
  • In a medium frying pan, place your avocado oil and heat pan to medium heat. 
  • Next, crumble your tofu in your pan, once pan is warmed up, along with your jackfruit. Sauté for about 5 minutes or until tofu starts to brown. 
  • Then add, peppers, onion, kale and black beans. Mix and stir with tofu and jackfruit for two minutes. 
  • Lastly, add your garlic and ginger, sauté for 1 minute, add cheese til melted. 
  • Once cheese is melted, set taco filling aside in a bowl. 
  • Using your same pan, brown your tortillas and fold them in half when done. Place taco filling inside and enjoy!
