Toasted Pine Nut & Blueberry bites

INGREDIENTS:
​1 Cup organic, pitted prunes
2/3 Cup organic pine nuts, toasted
2/3 Cup organic shredded coconut, toasted
2/3 Cup organic butter, softened
2/3 Cup dried blueberries
20G or 1 scoop of favorite unflavored protein powder
1 Tbsp Spectrum Warrior Blend

DIRECTIOINS:
  • Pre-heat oven to 350 and spread out your shredded coconut on a small baking sheet and your pine nuts on a separate baking sheet. Bake lightly until coconut is a very light golden brown and pine nuts are golden brown.
  • In a food processor or blender combine prunes, softened butter, protein and Spectrum Warrior Blend. Blend until a paste-like consistency is reached.
  • Next, with a wooden spoon or rubber mixing spatula, fold in your pine nuts, blueberries and coconut.
  • Roll into small 1" balls and refrigerate for 1-2 hours, or until set up.
