Pumpkin Mousse Parfait

INGREDIENTS FOR PUMPKIN MOUSSE:
1 heaping cup Organic pumpkin puree
1/2 cup raw, unsalted cashews (soaked 4-6 hours prior)
1/2 cup full fat, organic coconut milk or cream
1/4 cup organic maple syrup
1 1/2 tsp. ground cinnamon
1/ 1/2 tsp. organic almond extract
1/4 tsp. Himalayan pink salt 

YOU WILL ALSO NEED:
1/4 cup natural or organic pumpkin seed granola
1/4 cup plain or vanilla Greek probiotic yogurt

DIRECTIONS:
  • Blend all ingredients thoroughly in blender or food processor.
  • Chill for 4-6 hours, or overnight for best consistency.
  • Once chilled, divide evenly into 4 portions, first adding a layer of pumpkin granola. Next, a layer with pumpkin mousse. Top this layer with plain or vanilla Greek yogurt. Finally, finish off your layers with a dollop of pumpkin mousse and a sprinkling of granola.
  • Enjoy with a grin!
