Lemon Almond Poppy Seed Muffin

Ingredients: 

2 cups quick GF oats
1 cup Forager cashew yogurt (vanilla bean) or greek yogurt
3/4 cup whole almonds
1 lemon
1 cup milk or alternative milk
1 tsp vanilla extract
2 tbsp poppy seeds
4 tbsp maple syrup
Directions: 

1. Mix all ingredients together in a mixing bowl. Squeezing juice from the lemon into your concoction.

2. Place into air tight container, top with whole almonds, and let stand overnight.
