Sweet Orange-cran French Toast

Ingredients:


2-4 slices Rudi's organic Rocky Mountain Sourdough (if you don't like sourdough, you can use whatever bread you prefer)

1 extra large brown egg
1/3 cup unsweetened vanilla almond milk
1 tsp ground nutmeg
1 tbsp ground cinnamon

Ingredients for Orange-cran "syrup"

1/2 cup organic coconut sugar (this keeps it diabetic friendly)
1/4 cup cranberries (fresh or frozen)
​1/2 orange
Directions for French toast:

1. In a bowl big enough to fit your bread slices in, mix together all ingredients and whip until smooth and fluffy. 
2. Use a medium frying pan and cook 2 slices at once until done on each side on a medium heat. 
3. Place on your plate, drizzle orange-cran "syprup" over top and enjoy!


Directions for orange-cran "syrup":

1. In a small sauce pan or small frying pan, place all ingredients in (squeeze your orange for juice and pulp only), sauté on medium-low heat for several minutes. It will thicken up a little forming a "syrup" like texture. 
​**I also smash my cranberries in the pan after they have heated up a bit.

Vegan Breakfast Tacos

Ingredients: 
2 organic flour tortillas
3 oz firm, organic tofu 
3 ounces Daiya pepper jack cheese
1/4 cup Upton's Natural chirizo jackfruit
1/4 cup organic black beans(canned or cooked prior)
1/2 cup kale
1/3 bell pepper, sliced/diced

1 clove of organic, fresh garlic
1 thumb of organic, fresh ginger
Small slice of onion diced
1 tbsp avocado oil (for cooking with)

Directions: 
  • In a medium frying pan, place your avocado oil and heat pan to medium heat. 
  • Next, crumble your tofu in your pan, once pan is warmed up, along with your jackfruit. Sauté for about 5 minutes or until tofu starts to brown. 
  • Then add, peppers, onion, kale and black beans. Mix and stir with tofu and jackfruit for two minutes. 
  • Lastly, add your garlic and ginger, sauté for 1 minute, add cheese til melted. 
  • Once cheese is melted, set taco filling aside in a bowl. 
  • Using your same pan, brown your tortillas and fold them in half when done. Place taco filling inside and enjoy!

Almond Gogi Berry Proats

INGREDIENTS:
1/2 Cup organic, rolled oats
1/4 Cup filtered water
1/4 Cup unsweetened vanilla almond milk
1 Tsp Madagascar vanilla extract
1 Scoop of favorite, unflavored, protein
1 Tsp Spectrum Warrior Blend
2 Tbsp slivered almonds
2 Tbsp dried gogi berries
1 Tsp ground cinnamon
1/8 Cup organic, amber coconut palm sugar
1 packet of monk fruit in the raw
DIRECTIONS:
  1. In a small, or medium, sauce pan bring oats, water, almonds, and almond milk to a low boil.
  2. After oats begin to boil, turn heat down to  low. Add in vanilla extract, coconut sugar, and gogi berries. Cook until oats are at desired texture.
  3. Place in bowl, sprinkle with Spectrum Warrior Blend, cinnamon, and monk fruit.
  4. ENJOY!
