Lemon Almond Poppy Seed Muffin

Ingredients: 

2 cups quick GF oats
1 cup Forager cashew yogurt (vanilla bean)
3/4 cup whole almonds
1 lemon
1 cup oat milk (I use Oatly)
1 tsp vanilla extract
2 tbsp poppy seeds
4 tbsp maple syrup
Directions: 

1. Mix all ingredients together in a mixing bowl. Squeezing juice from the lemon into your concoction.

2. Place into air tight container, top with whole almonds, and let stand overnight.

Strawberry Lemon Overnight Oats

Ingredients: 

1 1/2 cup oats
​2 tbsp chia seeds
2 tbsp poppy seeds 
1 Lemon
4 large strawberries
2 tbsp maple syrup
3 tbsp Forager Cashew Yogurt
3/4 cup Oatly oat milk
1 tsp vanilla extract

Directions: 


1. Combine all ingredients into a mixing bowl. Mix thoroughly. 

2. Place mixture into air tight container and store in fridge overnight. 

3. Eat in the morning as you rush out the door.

Strawberry, Blackberry Walnut Overnight Oats

Ingredients: 

1.5 cups of quick oats
1/2 cup cashew yogurt (or yogurt of choice)
1/2 cup coconut cream
1/2 cup oat milk
4 large strawberries sliced and diced
3 tbsp blackberry preserves 
2 tbsp crushed walnuts
2 tbsp chia seeds (activated)
2 tbsp local honey
1 tbsp ground cinnamon
​1 tsp Madagascar vanilla 
Directions: 

1. Combine all ingredients into a steel mixing bowl. 

2. Place in food storage and place in fridge overnight. 

3. Breakfast in the am.

Spiced Pear & Blueberry Overnight Oats

Ingredients: 

1/2 organic pear
​1 handful of organic blueberries
1 cup of quick oats
1 cup oat milk or nut milk
1 cup cashew yogurt
2 tbsp local honey
2 tbsp activated chia seeds
1 tbsp ground cinnamon 
1/2 tbsp allspice
1 tsp vanilla extract

Directions: 

1. In a medium stainless steel bowl, combine all ingredients and mix with a rubber spatula. 

2. Place ingredients into storage container and put in fridge overnight. 

3. Plate and enjoy in the morning!

Buttered Toffee Pecan & Peach Overnight Oats

Ingredients: 

1 cup of quick cook oats
1 medium peach
1/2 cup crushed buttered toffee pecans
1 cup oat milk
1/2 cup cashew yogurt
​2 tbsp activated chia seeds
1 tbsp vanilla extract
2 tbsp maple syrup
1 tbsp allspice 
1 tbsp cinnamon

Directions: 

1. Combine all ingredients into a bowl and mix with rubber spatula. 

2. Place well-mixed ingredients into a storage container and place in the fridge overnight. 

3. Enjoy breakfast in the morning or a snack on the go!

INGREDIENTS:
2 cups quick gf oats
1 cup Forager cashew yogurt
2 tbsp chia seeds
1 tbsp pumpkin pie spice
1 tsp cinnamon
1 tbsp vanilla extract
1 cup Oatly oat milk
2 tbsp local honey
1/4 cup pumpkin puree
DIRECTIONS:
  • In a medium mixing bowl, combine all ingredients. 
  • Place in air tight container and place in the fridge overnight.
